A very talented friend 8) made me this for my birthday. I’m not 100% sure what its name is but it tasted like a very big (and scrumptious) coconut macaroon.

Yay, I love Anzac Biscuits. Have to say its nice to have something very Australian that I can actually be unashamedly proud of. Anzac day isn’t far off around the corner, so here isa recipe that I improvised with the other day.These biscuits are the sweet, chewy kind, they have a lot of texture and are best eaten within a few days of making them.

100g wholemeal flour, 100g rolled oats, 80g coconut ( a mix of dessicated and flakes), half a cup of white sugar, a sprinkle of brown sugar, a pinch of salt. Mix.

40g of butter/marg, 2+ tablespoon of golden syrup, melt in saucepan, take from heat and add half a cup of boiling water with a teaspoon of bicarbonate of soda. Stir in with dry ingredients, add a tiny handful of chopped nuts. ( I used almonds, cashews, hazelnuts, peanuts and macadamias) Cook at 180-190 for about 20-30 minutes. Very yummy.
